Roman Cuisine

Traditional Roman cuisine is characterized by its use of simple, fresh ingredients and bold flavors.

A large variety of produce, meats, and fish is used in traditional roman dishes, that have also been influenced by Jewish tradition.

 Pasta dishes, such as spaghetti alla carbonara (spaghetti with pancetta, egg, and pecorino cheese) and cacio e pepe (pasta with cheese and pepper), are staple foods. Another popular dish is saltimbocca alla romana (veal or pork with prosciutto and sage), which is typically served with a side of vegetables. Offal is also a prominent ingredient in traditional Roman cooking, appearing in dishes like trippa alla romana (tripe with tomato sauce) and coratella con carciofi (heart and liver with artichokes).

 Other classic Roman dishes include porchetta (slow-roasted pork), abbacchio alla scottadito (grilled lamb chops), and suppli (fried rice balls filled with mozzarella). Roman cuisine is also known for its baked goods, including pizza bianca (plain pizza bread) and suppli al telefono (mozzarella-stuffed fried rice balls).
